Victor’s Mexican Restaurant feels welcome in Huxley

They have only been in town for a short while, but they are already feeling at home.

Claudia Longoria, manager of the family-operated restaurant and daughter of owner Victor Soto, said her family is pleased with how well the restaurant has been doing since they opened Feb. 2. Now that they have their liquor license, they are hoping their customer base will continue to expand.

Located in the building north of Subway in the Ballard Plaza, the restaurant offers authentic Mexican cuisine prepared by Victor. Claudia said her father has been cooking food since the age of 8, when he worked a taco wagon while living in Mexico. After moving to California, Victor worked at various restaurants, furthering his cooking skills. Claudia said all the food served at the restaurant is made fresh and is authentic - no Tex-Mex food.

“You’ll get the real Mexican food experience,” Claudia said.

The decision to open a restaurant in Huxley came after the family saw an ad placed on Craig’s List for the building. They had been looking for a place to open a restaurant in Des Moines, but when they saw the Craig’s List ad, the family decided to give the small town a try. Prior to opening Victor’s, the family owned a Mexican buffet in Des Moines and a restaurant in Osceola, both of which they no longer own.

Victor’s Mexican Restaurant is open Tuesday through Sunday, with lunch and dinner specials served on the weekdays. A buffet is offered on Sundays, but customers may also choose to order off the menu. The six employees at Victor’s strive to make sure customers are satisfied with not only the food, but the service as well.

“We want them to have the best experience and really enjoy coming here,” Claudia said.

As a result, Claudia said they have a number of customers who regularly dine at the restaurant.

The Soto family already has plans for the restaurant’s future, despite having just opened a few months ago. Claudia said with their recent approval for a liquor license, they want to extend their evening hours on Friday and Saturday nights and offer a full bar. Opening the back patio for customers to sit and enjoy a meal or drinks is another plan.

Claudia said her family appreciates the support the community has shown the restaurant since it opened, and hopes that support continues.

“We’re thankful the people of Huxley have welcomed us and supported us,” Claudia said.
